Easy Campfire Hash
What you need:
- 1 kg. shredded hash brown potatoes (refrigerated)
- 1/4 kg. frozen fully cooked breakfast sausage links, thawed and sliced into 1/2-inch pcs.
- 12 eggs, lightly beaten
- 1 cup shredded cheddar cheese
- 1/4 chopped onion
- 1/4 cup chopped green bell pepper
- 1/4 cup butter, cubed
- Salt and pepper to taste
Melt the butter in a deep cast iron then add the shredded potatoes, sausage pieces, onion and green bell pepper. Cook over medium heat, turning once, until potatoes are lightly browned, about 15 minutes. Push the mixture to the side of the cast iron before pouring the eggs in the center. Season with salt and pepper. Cook and stir until eggs are set then stir together with potato mixture. Top with cheddar cheese. Cover and cook for 1-2 minutes or until cheese has melted.
Camping Tropical Burger
What you need:
- 6 French rolls, sliced in half
- 1/4 kg. deli sliced ham
- 6 slices cheddar cheese
- 6 rings pineapple
- 2 tablespoons Dijon Mustard
- 1 tablespoon honey
Combine the Dijon mustard and the honey in a small bowl then spread the mixture at the bottom of each roll. To prepare a burger, fold 2-3 hams and place on top of the honey mustard followed by a pineapple ring, a slice of cheese then the roll’s top half. Wrap each burger with a square of foil then cook over hot coals for about 15 minutes, depending how hot your campfire is.
Yummy Apple and Oats Crisp
What you need:
- 2 red apples, cored and sliced in 1/2-inch chunks
- 1/2 cup rolled oats
- 2 tablespoons chopped almonds
- 1 tablespoon honey or maple syrup
- 3 teaspoons coconut oil
- 2 teaspoons hemp seeds
- 1/2 teaspoon cinnamon
- Pinch of salt
Melt the coconut oil in a cast iron over low fire then add the oats, cooking until toasted. Stir in the honey, cinnamon and salt. Sprinkle the mixture with almonds and hemp seeds. Add the apples and stir until all ingredients are well-combined. Cook for 5 more minutes, stirring every minute to avoid the crisp from sticking to the pan.
